Finding gourmet addresses is not easy in Essonne. To allow consumers to see things more clearly, the Chamber of Commerce and Industry of Essonne, in partnership with the Chamber of Trades and Craftslaunched, 25 years ago, the Golden taste buds. The label was assigned has 60 food shops for the year 2025 during a ceremony held on Monday November 4, 2024.
Several evaluation criteria
Each of these awarded businesses received a visit of a jury composed of a professional, a consumer and an advisor.
The latter audited the establishments on precise criteria such as the interior and exterior condition, the presentation and display, the welcome, the services offered, compliance with the various regulations and finally the quality of the products and tasting.
At the end of these visits, the juries labeled the candidates by granting them 1 to 4 taste buds.
“A guarantee of quality and excellence for the people of Esson”
For greater readability, the organizers have classified the winning businesses into different categories : butcher, bakery, wine merchant, charcuterie, chocolate shop, cheese shop, pastry shop, fish shop, greengrocer, roaster and caterer.
In Montgeron, the l'Affinez bistronomic cheese shop, was labeled for the first time. After a career in cardiology research, Laëtitia Barbe and her partner decided to retrain in the world of raw milk farmhouse cheese.
“By participating in this competition, we want to be recognized as passionate craftsmen with know-how and quality products. It is an honor to be certified by the Papilles d’Or. This sounds like a guarantee of quality and excellence for the Essonniens,” underlines Laëtitia Barbe in a press release.
“They’re a bit like our Michelin guide stars”
For the pastry shop Paris Panem in Orsay,This is a second year of certification. Created by a former head baker at Cyril Lignac, Valentin Delvalet with his best friend Tifenn, the boutique offers refined pastries that combine technical know-how and creativity.
“The Golden Papilles allow you to promote our work and that of our colleagues . This is a guarantee of quality for our customers. They are a bit like our stars in the Michelin guide,” assures Valentin Delvalet.
“The feedback from the jury allows us to question ourselves”
In the south of the department, the bar-cave atypique Beer’s not dead, is celebrating its 6th year of certification.
Established in Dourdan since 2018, the establishment offers 350 craft beer references from local and international breweries. A meeting place where it is also possible to have a bite to eat and even leave with a tattoo.
“Every year since its creation, Beer's not dead has won Papilles d'Or, most often with four taste buds! This competition and the feedback from the jury allow us to question ourselves and continue to improve the experience we offer to our customers,” explains the manager, Grégory Da Gloria.
A public prize awarded for the first time this year
Finally, this year, the label has added something new: the Public Prize. More than 3,000 voters mobilized to reward the Artisan Pastry Chef in Viry-Châtillon.
