“Parisian pastry”, new work by Arnaud Delmontel

THE May 24 will appear in Editions de la Martinière the second work ofArnaud Delmontel : Parisian pastry: 70 recipes at the heart of history (35€). The author offers a journey through the capital through the history of its emblematic pastries, such as the croissant, the millefeuille and the croquembouche, for which he reveals the recipes.

The pastry chef, winner of the first prize of the label “ made in Paris » has never hidden his penchant for the historic places of the City of Lights. From its beginnings in 1999, he took over the old bakery The Renaissancecharmed by its history dating back to 1872. Since then, he has reinvented traditional recipes in bakery, pastry and chocolate making in his 4 Parisian boutiques.

This publication is therefore an opportunity for the chef to participate in the dynamism and influence of his city while sharing his passions for the culinary art. Prefaced by Stéphane Bern, the work is illustrated by the photographer Guillaume Czerw and formatted with the help of Bénédicte Bortoliauthor specializing in gastronomy.
