Valentin Laiguillon and his sister, Cecilehave just taken over the charcuterie of Dominique Hamelwho retired after forty years at the head of this Moret-sur-Loing institution. Their objective: to offer catering services, traditional cuisine as well as delicatessen products.

“We have brought old-fashioned recipes up to date”

Valentin has always worked in the world of cooking, since the age of 12. In fact, he started as a seasonal worker at Saint-Jean-de-Montsin Vendée, then, before arriving in Moret, he was notably assistant chef at the Relais de Barbizon.

Cécile was, before starting this new adventure with her brother, notary clerk for 14 years: “This will allow me to bring my legal skills to our new company,” she explains.

If, initially, the duo’s objective was to launch solely into a catering activity, they ultimately decided to continue with charcuterie, given the age of the shop of which they have just taken over the reins: “We have brought up to date old-fashioned recipes,” explains Cécile.

“We only work with French products”

Their pleasure is to work as much as possible with local producers. Valentin likes, for example, to quote Augustine, from the Four Winds Farmlocated in La Chapelle-la-Reine, which supplies them with their vegetables, but also their eggs and poultry.

The new co-manager of the premises also specifies: “We do not work only French productslike Label Rouge pork.” These two young culinary artists are also considering working on a very particular and rather original product, the chestnut-raised pork.

In addition to their delicatessen-catering activity directly in store, Valentin and Cécile have added an on-demand catering service for individuals and professionals. Finally, note that the siblings chose to rename the place: The Flavors of Loing.
