the essential
For 12 years, Mark Corrie – who was once the Rolling Stones’ chef – has been in the kitchen at the restaurant “Le Kiwi” in Mas d’Azil.

Arriving in Ariège 25 years ago, first living in La Bastide-de-Sérou, then in Montégur-Plantaurel, Mark Corrie literally fell in love with Mas d’Azil, where he acquired the former shop of the watchmaker Vivian Fauré known as “Tic-Tac”, which he completely renovated and transformed into a restaurant.

A quality card

This is how, for 12 years, Mark Corrie has been in the kitchen of the restaurant “Le Kiwi” at Mas d’Azil, in the very village where he lives. Both owner and manager, his know-how has just been rewarded by the 2024 Routard guide, which this year again, has listed it among the good restaurants, thanks to its quality menu which offers “homemade” dishes, prepared with fresh and local products (but not only…).

In a refined and warm setting, you can enjoy new proposals every day. On the menu, 2 starters, 2 main courses, 2 desserts, including a vegetarian starter and main course, a menu that is enriched every day with suggestions from the chef based on the products that the season offers.

“What characterizes me is that I am generous and that can be found in my cooking, generous and gourmet cuisine. I really like exotic cuisine, so there are a lot of flavors, a lot of fresh herbs, a lot of vegetables, even in meats, like Asian cuisine, whether Indian, Oriental, Thai or Chinese”.

Born in London to an English father and French mother, Mark trained in Bordeaux, and has worked in kitchens in Italy, Spain, Australia and Thailand, as well as in New York and London.

The Rolling Stones, the Queen of England and Paul and Linda Mac Cartney

You can’t help but hang on to his lips when he tells you that he was once the cook for the Rolling Stones. “I was 21 years old, and one day a week, I replaced their assigned cook. After the service, I sat next to them, we drank beers and they played us the songs they were working on on our Walkman. It was fabulous. “. He also cooked for the Queen of England and Paul and Linda Mac Cartney.

A true enthusiast of good cooking, he is supported in the kitchen by Simon who was his apprentice and Anne-Sophie in the dining room to welcome gourmets and ensure service. A part-time “dishwasher” completes the team, and in the summer, a second part-time server is hired.
