LOVE SALAD WITH K

INGREDIENTS
Salad
• 2 cups (390 g) cooked quinoa, cooled
• 4 cups (100 g) baby spinach
• 3 cups (225 g) sprouted beans
• 1 cup (40 g) coarsely chopped fresh parsley
• 1 cup (130 g) cashews, roasted and salted
• 1 red pepper, diced
• Seeds of 1 pomegranate
• 1/2 cup (75 g) dried cherries, roughly chopped
• 1 package of 200 g of coffee mushrooms, thinly sliced Vinaigrette
• 1 C. tbsp (15 ml) grated fresh ginger
• 1 C. tbsp (15 ml) apple cider vinegar
• 1/4 cup (60 ml) tamari sauce
• 2 tbsp. teaspoon (10 ml) toasted sesame oil
• 1/3 cup (80 ml) olive oil
• 1 C. tbsp (15 ml) honey
• 1 small clove of garlic, chopped
PREPARATION
Salad Dressing
- Don’t hesitate to add chickpeas or cooked chicken for a more substantial salad.
- Place all salad ingredients in a large bowl. To book.
- In a small bowl, using a whisk, mix all the vinaigrette ingredients.
- Pour over the salad and toss gently.
