She is proud. And rightly so. At just 21 years old, Anaëlle Prolongeau is not just “making her dream come true”. With his partner Luis Gomez, they developed their business and created a job. In just a few months, Elle & Lu, a small pastry shop located in Talence, has created a buzz and is delighting gourmets with its cakes and tiramisus. Her choux, “a classic of pastry”, agrees the former student of Ferrandi, which she knew how to “pimp” with colors and flavors, when Italian desserts made variations according to the seasons, playing with acidity citrus fruits like the sweetness of praline hazelnuts.
The growing success of its little treats quickly got the better of the Talençais mini-local. It is therefore in Bordeaux that the young couple opened a new boutique at the beginning of October that matches their ambitions. A stone’s throw from Rue Sainte-Catherine, the pastry shop opens up into a tea room to take the time to taste it, in a deliberately minimalist and very cozy decor. But, more important for Anaëlle, “I finally have a real laboratory”, rejoices the pastry chef as she unveils the oven rolls, which allows her to bake 300 of her choux puffs in one round.
A job created
Bites that she will continue to offer according to her inspirations but for which each customer will be able, when ordering, to choose the filling, the topping or the coating, as well as the toppings. Annaëlle Prolongeau insists on her “desire to share her gesture with the customer and show them that everything is homemade”, thus making the sharing of her creations “an experience”.
To assist her in the kitchen and in the shop, the pastry chef recruited Alexiane, who like her has barista training, to complete the offer. A competition all the more necessary as the couple chose to open the store without interruption from Monday to Sunday, from 8 a.m. to 7 p.m. History of satisfying desires at any time. With the hope “that in addition to orders for weddings and baptisms, we can create a second job”, plans Luis Gomez.
