The Bordeaux manager of Bistro Régent was the guest of the show “Patrons en questions” on the CNews channel on December 31, 2024. Since then, Marc Vanhove’s comments have been on heart of a controversy on social networks.

It was in particular a 35-second extract that sparked a reaction: questioned by columnist Sophie de Menthon, he boasted of keep your staff by only training them in the franchise system.

“We don’t have any cooks”

“Basically, we don’t have no cooks, explains Marc Vanhove in the extract. We train them and format them in our system, which means that we don’t have personnel problems because we can’t steal our cooks. »

And the entrepreneur continues: “They don’t know make an egg mayonnaise, a dish of the day or a chocolate mousse. So, they stay with us and we have peace of mind.”

Sophie de Menthon then congratulates Marc Vanhove: “I find that pretty awesome to teach them just how to stay in your home and be effective in what they do.” Many Internet users seem to have been shocked.

“So there, the owner of Bistro Régent explains with a smile that in the kitchen, his staff does not know how to cook and is just “trained” to what is done in the company and not sufficiently trained to leave her,” lamented journalist Laurence Mildonian in a publication widely shared on X (formerly Twitter).

The sequence is judged as « ignoble » by some, others are calling for a boycott. Even if several Internet users have stressed that it is an “effective strategy” for a chain closer to “fast food” than to a restaurant.

A franchise with a simple formula

On the continuous news channel, the founder of Bistro Régent returned to the creation of his franchise. In 2010, he opened three restaurants at the same time in Bordeaux. He was quickly supported by Philippe Etchebest, and notably became a sponsor of the Girondins de Bordeaux (before the club’s collapse). Today, there are more than 100 restaurants in .

If employees can simply be “formatted”, it is because the principle of Bistro Régent is based a reduced map. In the unique formula at 15.90 euros, unlimited fries and a bowl of salad accompany meat or fish and a unique sauce. The franchise was also condemned after being accused by the L’Entrecôte channel of having copied it.
