Diluting ice cubes, which can be purchased in supermarkets or made at home, makes it possible to add more lightness to cocktails based on alcohol. As for the proportions: “For each person, you need two units of alcohol for one unit of acidity (citrus fruits) and one unit of sugar.“, Smaïl explains.

Planter’s recipe for 10 people (2 glasses per person):
- 1 bottle of white agricultural rum
- 1 bottle of brown agricultural rum
- 1 liter of fresh pineapple juice
- 50 cl of fresh orange juice
- 30 cl of fresh lime juice
- 20 cl of grenadine syrup
Mix, keep cool, and serve in a pitcher or ladle with ice cubes. Garnish: pineapple and orange slices.
Recipe of sangria rosé for 10 people (2 glasses per person)
- 2 bottles of rosé wine
- 3 peaches or nectarines, cut into pieces
- 150 g raspberries
- 1 tsp sugar
- 5 cl of Grand Marnier
- 30 cl of sparkling water
Mix, set aside in a cool place. Serve in a salad bowl with a ladle. Garnish: mint sprigs, redcurrants and raspberries.

Recipe of mojito to share for 14 people
- 1 bottle of Cuban white rum
- 35 cl of fresh lime juice
- 15 to 20 crushed mint leaves
- 25 cl of sugar cane syrup
- 35 cl of sparkling water
- Full of ice cubes
Mix everything together, keep cool. Serve on ice (presentation possible in a drinks fountain)
Good to know : More economical than a cocktail bar, these recipes require a minimum of ingredients and help with service! For example, you will need to budget around 15 euros for a bottle of Cuban rum.
Alternative cocktail recipes: with pastis or alcohol-free
A recipe for Moorish by the pitcher for 10 people:
- 8 cl of barley syrup
- 24 cl of Bellamira pastries
- 120 cl of water
Mix all ingredients in a large pitcher. Serve chilled over ice.
A non-alcoholic cocktail recipe: strawberry lemonade and mojito fountain
- 100 ml Monin strawberry syrup
- 100 ml Monin mojito mint flavored syrup
- 400 ml Monin lemonade base syrup
- 8 L of sparkling water
Pour all ingredients into a beverage fountain. Add lemon slices for decoration. Top up with ice cubes to the brim. Mix. Garnish with mint sprigs and a few strawberries. Serve chilled.
