After a 1is work “Pâtisserie Santé”, released in 2023, the pastry chef, Sandrine Baumann, co-wrote with health professionals, a book on malnutrition and one on diabetes.
L'obs de Beauvais: You released two new books in October 2024. What differentiates them from the first, released in October 2023?
Sandrine Baumann : These are two books, Healthy Pastry “undernutrition” et “diabetes” which arise from premier where the subject is refocused, this time on a specific pathology. One on malnutrition and the other on diabetes.
The first was more general, discussing chronic illnesses in their entirety and which I had written alone even though it had been validated by the medical profession. There, for these two works, the concept was to co-write them with professionals, whose pathology is their area of expertise.
Is there a more specific aspect this time?
Quite. Each of the two books is divided into two parts. The first focuses on the pathology written by the professional.
For “Unnutrition”, I worked with the professor Agathe Raynaud-Simongeriatrician and nutritionist atBichat hospital in Paris and the second is co-written with Ariane Sultan who is a diabetologist and head of the diabetes and nutrition department at Montpellier University Hospital. The second part of the book focuses on recipes adapted to the pathology.
What audience are your works aimed at?
We have several targets. Healthcare professionals, of course. But especially the general public. This is why we adapted the speech for the scientific side.
Why did you choose to treat these pathologies in particular?
For both, it’s a decision made with my editorial team with which I am fully aligned. However, undernutrition is a subject on which I have been involved for three years. It's a disease that I encounter in my oncology workshops but also during EHPAD workshops with seniors.
It affects two million people in France and few know about it; this disease is sometimes not understood. When it is taken care of early enough and we choose the right nutritional strategy, we can recover from it. Furthermore, such a work which combines both recipes and a medical explanation on this subject is, to my knowledge, the only one on the market.
We hear more regularly about malnutrition than undernutrition?
Exactly. Undernutrition is an imbalance between nutritional intake and the body's needs which results in weight loss but above all a loss of muscle mass. It can affect an adult, a child or a senior at any age. An elderly person with Alzheimer's or cancer may suffer from malnutrition.
Can we expect another book next year?
We will know soon (laughing). We have to give these three time (available in all bookstores in France and online) to settle down, everything in its time. But I think there will be room to offer new works that meet the demand.
