Epiphany is next Monday. In Brussels, the first election for the best artisanal and sustainable Galette des Rois took place. We reveal the result for you to enjoy this weekend.
Epiphany marks the day of tasting the famous Galette des Rois. A generous almond-based cake, in which a bean is slipped, which makes whoever finds it, the King or Queen of the day. But it still has to be good. A few weeks ago, a competition took place in Brussels to choose the best artisanal and sustainable pancake. The first of its kind, because if you watch what you eat all year round, there’s no reason not to do it during the holidays too.
The best artisanal and sustainable cake
The competition was organized by Noémie, from Mingle, food and sustainable consultant, and Tartine et Boterham, the guide to bakeries and pastries in Brussels. Together, they brought together eight Brussels journalists and personalities specializing in food, to test no less than 14 pancakes. The competition was open to all artisanal pastries and bakeries located in the Brussels region, but certain sustainability criteria had to be met. For example, the raw materials for the pancake must be Belgian and/or organic/artisanal. The rating was established on the basis of appearance, structure, texture and of course, taste.
After a hard day of tastings and close quotations, the results fell this Thursday, January 2, 2025, just in time to pick up our cake this weekend. Here is the winning trio:
