He summarizes his journey: Coming from a family of traders from Limousin, I studied business. I had the revelation of cooking thanks to Joseph Travia (Ambazac). I went through the Paul-Bocuse institute and there, I did internships in very beautiful houses before going abroad, then to Corsica and Marrakech (Morocco) where I met Karima, who is became my wife. When they were ready to go abroad a year ago, the couple discovered this transfer and took it as a new challenge. The chef adds: We preserve the house spirit by putting our touch on it. The central idea is to use the excellence of local products to make dishes to share between epicureans.
