– Some bakers could find themselves against the wall.

Are our beloved French pastries, emblematic of French gastronomic culture, about to become a luxury product ? In any case, this is the fear evoked by 3 Auvergne-Rhône-Alpes. With the very significant increase in the price of butter, some bakers could find themselves at the foot of the wall and be obliged to increase the prix of their pastries. In any case, this is what the Haute- bakery federation is proposing, which details its reasons.

Jean-Louis Chapuis, president of the federation of artisan bakers and pastry chefs of Haute-Loire, explains that “we were at 4.50 euros per kilo, and today we are at 9 euros. Not to mention the increase that is to come.. In his eyes, the choice of review pricing policies and adjust prices, with an increase of five to ten centsis an imperative: “Otherwise, our bakeries risk finding themselves in difficulty in some time», he predicts, not without fear.

Increase the prices of manufactured products?

This proposal seems to garner approval of customers interviewed by the television channel: “If this can allow us to keep our small bakeries, why not? But others believe that this increase prices must, in all cases, remain reasonable. Especially since some bakers don't necessarily feel at ease with this proposal and are for the moment more inclined to refuse to increase their prices, particularly because of the composition of their clientele.

Pierre-Alain Muller, baker in Espaly-Saint-Marcel, is one of them. For him, in view of his customers, an increase is inconceivable: “We have an elderly clientele with small pensions, and we want to prevent them from giving up these basic pleasures”he justifies. “We will try not to change prices as much as possible, but we could increase those of processed products.”
