As part of the “transmission-resumption” month, the Vosges Chamber of Commerce and Industry and the partners of the “transmission-resumption” pact organized at the Gérardmer catering and hotel trades high school a conference on the theme “business transfer-takeover of cafes, hotels and restaurants”.

In the room, potential sellers or buyers were able to find out more about the specificities of this sector of activity, marked by a renewed interest: recruitment is a little less complicated and young people do not hesitate to launch themselves into the entrepreneurship and take over business.

If the period following the Covid health crisis proved to be “catastrophic in terms of takeovers and sales of companies, we are currently seeing a favorable context”, underline the specialists of the Chamber of Commerce and the transport industry. Vosges. “A lot more young people are getting started right out of school,” indicate Patricia Lopez and Lorène Lacernat, project managers at the CCI.

It is obviously no coincidence that the professionals chose to meet in the premises of the Gérardmer catering and hotel trades high school, an establishment which is a real breeding ground for hotel and catering employees, but also future hoteliers-restaurateurs or cafe owners. “The young people are well trained here. They are more and more precise in their forecasts, the calculation of costs and their margins,” lists Lorène Lacernat.

Anticipation is the key word

Benefiting from specific assistance to set up, before the age of 30, and sometimes benefiting from family support, these young entrepreneurs are not afraid to take the plunge, sometimes with an already rich experience. “We have more than 900 internship locations in Europe,” illustrates Francis Vignola, the high school principal.

Restaurant, nightclub, café, hotel or campsite have evolved in recent years, adapting to customers, but also to rising costs and even climate change. “The Covid crisis had a major impact on us when we were already short of staff. Here we benefit from a natural tourist influx. Lakes, forests and winter tourism attract a lot,” explains Hervé Pierrel, vice-president of UMIH, the union of hotel trades and industries.

“There will still be beautiful snowy years. Cultural heritage, triathlon, industrial tourism are alluring. Green tourism is becoming very popular. In the Vosges, the hotel sector is very well regarded,” defends the hotel and catering professional.

A study carried out by KPMG accountants attests to an upscaling of the hotel stock with stable reception capacity for a decreasing number of establishments. Establishments located in villages or in remote places disappear. “One in two deals are not done because of the reluctance of transferors who have difficulty leaving their baby’s keys. We are here to support them and above all anticipate! », recalls Patricia Lopez. Anticipating and adapting to current trends, buyers have plenty to do!
