Exit the Conti, it has become Black Soul. The owners who bought the central establishment completely renovated it. New concept and new team too.

Adrien, David and Joris were already partners in the Black Wood restaurant, at the circuit, they have also been partners since June 21, 2023 in the takeover of a flagship address for gay life, the Continental café – the Conti for the population – which they just named Black Soul last March. “We broke everything inside, we changed the layout of the bar, installed barrels and added forty seats on the terrace. We also completely changed the lighting and the music. It was an interior designer who designed the harmony of colors. The kitchen and dining room team has also been renewed: the only thing left of the old brigade is Zizou Montoya in the service. The hours have also changed: Black Soul is open from 9 a.m. to midnight all year round. “We work 7 days a week. On Friday, for the market, we open at 8 a.m.”. The shooting takes place around midday: the clientele is mixed, made up of workers, liberal professions, rugby fans, friends of the bosses who come from Albi…

At the center of Gaillac life:

In catering, the partners imported (with the agreement of the Ravari family) the “poor man’s puree” which had been the great success of Sicret Albigensian. “We work with fresh, seasonal products. There are no strawberries or tomatoes in winter. At the bar, we make classic cocktails and make our juices from fresh fruit.” Adrien, David and Joris wanted to have a wide range of spirits, which are consumed more than one might think. Lovers of gin, rum and whiskey will find something to choose from, from entry-level to more substantial budgets. Black Soul has a tapas menu at the bar and in the dining room and relies on local winegrowers, such as Barreau, Carcenac or Sarrabelle. The menu is divided between “market garden side” (vegetarian), “sea side” and “land side”. And from 6 to 7 p.m. Black Soul offers aperitif time where a drink costs 5 euros. During the holidays, the partners bring an innovation: a snack based on pancakes and ice cream. The Black Soul team has twelve employees. A year and a half after their installation in Gaillac, the three partners say they are satisfied. “The concept, a mix of classic brasserie and live music, is popular. Gaillac residents have adopted it.”
