Not all the inhabitants of know about it, but they are lucky people. Every first Sunday of the month, Haut-Doubs Pizza prepares homemade pizzas for them in its food truck, located at 13, rue des Oréades. In the kitchen, Maxime Prencipe has just started selling directly to customers. Until now, it regularly supplied its two pizza distributors, located in Chafviens in the village hall parking lot and in Pontarlier, in the Mondovélo parking lot.

Homemade dough and fresh produce

“There are a lot of preconceptions about distributors, which is normal, it's new, people don't necessarily know. But there is everything, like in all kitchens,” explains the native of Chafviens. “All my products are fresh, apart from the beef. »

The pizza maker prepares his own dough with Naples flour and leaves it to rest for at least three days to make it more digestible. “Customers have told me that they can no longer eat pizza because of a gluten intolerance, but mine can,” he assures. “The dough needs to be worked. When you eat a pizza and you're a little bloated afterwards, it's because the dough wasn't rested enough. »

68 pizzas per dispenser

In 2022, Maxime Prencipe launched into the restaurant business after 15 years as a salesman, including 11 for the Badoz cheese factory and training as a pizza maker. Pizzas came naturally since his father is Italian, originally from Puglia.
