Their names are Luc, Mickaël, Cécile, Emilie…

Dressed in purple polo shirts, they are busy in the kitchen and in the dining room, every lunchtime of the week at Pinch of salt restaurant, in the Cormier area in (in Maine-et-).


Around twenty workers with disabilities

In total, there are around twenty workers, all with disabilities. This is the special feature of this restaurantmanaged by the Esat Choletais Arc en ciel.

Four social workers supervise this group, as endearing as they are helpful. Including Jean-Michel, present “since the beginning” of the restaurant opened in 2000. Twenty-five years that Pinchée de sel has stood out in the restaurant landscape.

Mickaël, too, is one of the oldest. The 47 year old man, with a disabilityloves this “atmosphere” that reigns here and enjoys meeting up with his colleague friends every day. “I like to tease the customers,” he adds, all smiles.

Four supervisors

The four supervisors provide “more sustained” attention to this staff with different profiles (down syndrome, mental or social deficiency, mental, psychological or motor disability) and a good part of which comes from an Itep (Therapeutic, Educational and Pedagogical Institute) or IME (Medico-Educational Institute).

“The idea is to let them work independently and validate their skills. It's important that they feel useful. Esat must be a springboard to move towards the ordinary environment,” explains Stéphane Angibaud, deputy director of Esat Arc en ciel, who offers many services including the restaurant.

A restaurant which, given the comments left in the guestbook and on the Internet, has a certain rating. Its traditional cuisine and its “friendly and smiling” service are highly appreciated.
