Best Revelation: Aldehyde
The start of the school year was coming and, at the same time, a chef, top of the class, stood out from the crowd by setting up his bistro on the edge of the Marais and the Quai de Seine. Youssef Marzouk, who was obviously not content with observing during his years in contact with the six-time starred Arnaud Donckele (Cheval Blanc, Paris and Saint-Trop), now takes his turn and compensates for the trappings of a rather substandard setting. through the detours of a cuisine clearly beyond, supported by sauces and techniques from here, touching to remember the original Tunisia. A simple leek vinaigrette was enough to create a signature: composed of a double play of textures and cooking (al dente and in a creamy puree) as well as a double base of a curry and coriander oil vinaigrette.
