Agnès and Pascal Courtade received the Collège Culinaire de label which highlights their know-how as master miller and master pastry maker.

The Prukibio company launched into the manufacture of organic flour and artisanal dry pasta in 2020. Four years later, the Courtade couple – whose shop is located next to the route de Condom at the exit of Nérac – won a precious label, that of the Collège Culinaire de France. Created in 2011 by 15 great restaurateur chefs (Alain Ducasse, Joël Robuchon, Thierry Marx, etc.), it opened up to producers a few years later.

Like Grand Nez Spirits gins

In the area, some have already obtained it, such as the gins of Grand Nez Spirits in Nérac, or Maison Carayon in the neighboring Gers. “I had heard about it through these two producers, so I filled out the application form, a bit on a whim,” says Agnès Courtade, who is in charge of the flour milling part of Prukibio, very simply. Her husband being more focused on the fields and orchards of plums and kiwis.

Beetroot, spices… The range of pasta – produced from organic flour made on site in a stone mill – is very wide. You can even find some with cocoa! “Be careful, it’s not sweet, it’s not chocolate.” Prukibio focuses its know-how on eating well and quality. It is no coincidence that the prestigious label chose to reward the Nerac company.

This labeling will open doors for the couple of producers. That of restaurants for example, who already work with Mr. Guss in Nérac and the pizzeria La bastide d’Armagnac in Gers. Also, the prestigious Château Arton in Lectoure invited them to its Christmas market.

New developments to come in the flour mill

Agnès Courtade does not forget to thank the local cereal growers who help Prukibio when domestic production is not enough to fill the mill. “This year, we were unable to plant buckwheat due to the weather. So, to continue providing gluten-free pasta, we turned to an organic IGP rice producer from the Camargue.”

And, another new feature, pasta boxes which will be served along the greenway which will run alongside the flour mill this summer.

Prukibio pasta is available at the Nérac and Eauze markets, at the Cœur de Village depot in Boé and on the online store.
