At this rate, there will soon be no more space on the window to display the awards… Teddy Rousselot, the baker and manager of the Saint-Fiacre bakery, in Avon (Seine et Marne)received the 2e price during competition for the best puff brioche, organized at the beginning of May by the Maison de la boulangerie, in Melun. A progression since last year, the baker won 3e place.

His buns also taste like solidarity

The keys to its success? “A lot of time, but also good products,” insists Teddy Rousselot. I only use local flours like the Bourgeois and Fouché mills, but also quality butter and eggs. »

Although he prefers to keep the secrets of his recipe, he nevertheless indicates that he replaces “part of the sugar with Vosges honey for more lightness in the brioche and a discreet aromatic touch.

Baguettes, traditional baguettes, pancakes and brioches: the Avon bakery continues to collect awards. “It also allows us to gain visibility,” he smiles.

In addition to that of success, the brioches from the Saint-Fiacre bakery also have a taste of solidarity since an operation was recently carried out to help the Avon’ânes association. On each brioche sold for €3.90, the bakery donated 50 cents to help the association which notably offers animal mediation.

Open Monday, Wednesday, Thursday and Friday (6:45 a.m. to 7:45 p.m.) then Saturday, Sunday and public holidays (7 a.m. to 1:30 p.m.).
