The restaurant Les Six-Communes, located in Môtiers, returns to excellence by appearing again in the famous guide Gault & Millau. After having been brilliantly managed for more than two decades by the Rohrer couple, the establishment is now in the expert hands of the Jacob couple, who bring a new touch while retaining the essence of this essential place.
Drawing on their rich experience acquired in Asia, Joffrey and Nora Jacob chose to settle in Madame’s region of origin to establish their family there and continue to honor the gastronomic tradition of Val-de-Travers. Despite the change in management, the soul of the restaurant is intact: an enchanting setting and a menu that highlights seasonal products worked with finesse.
Among the creations that seduce the taste buds, we find in particular grilled white asparagus served with a Hollandaise sauce flavored with wild garlic, accompanied by raw ham from the region. For lovers of more refined dishes, the carpaccio de maigre marinated with fresh herbs offers a beautiful complexity of flavors, with a texture subtly enhanced by crunchy vegetables. As a main course, the confit pork belly for twelve hours, served with seasonal vegetables, offers a melting and comforting treat. Next to it, the cod steak steamed in a bamboo basket also appeals, despite the asparagus risotto being a little too creamy.
To end on a sweet note, the Paris-Brest developed in collaboration with the famous chocolatier Jacot delights dessert lovers. As for drinks, it’s hard to resist a local absinthe or a sparkling glass of Mauler, emblematic products of Val-de-Travers.
