This Monday, January 20 in the evening, the world cassoulet championship of Toulouse has designated its two winners: the Maison Pardailhé de Toulousewho won the public prize, and the Pullman hotel in Lyonwhich won the jury prize.

A winner at heart

Charcutier-caterer, Philippe Pardailhé is not his first attempt. With his house located in Roquettes, a small town south of Toulouse, he is already triple gold medalist of the French pâté encrust Championship.
Selected among the five finalists
A few weeks ago, Philippe Pardailhé decided to take the selections for the 9th edition of the national Cassoulet competition.
“I don’t know when they passed or how it was decided, but I finally got a call to say I was one of the five finalists.”
This Monday, January 20, 2025, Philippe meets his four finalist opponents, at REX de Toulouse. Opposite it are the Maison du Cassoulet de Toulouse, the restaurant Le Cuq en Terrasses, the Bibent and the Pullman Lyon hotel.
A cassoulet for 150 people
“We each had our own time,” says Philippe Pardailhé. “We had to prepare a giant cassoulet for 140 guests and ten people from the jury. »
-Among the jury, several restaurateurs including Michel Sarranstarred chef and president of the jury, or even Jean-Jacques Bolzandeputy mayor of Toulouse, delegate for eating well, Jean-Baptiste Martyworld champion of cassoulet 2,024 and even Damien Comollipresident of the TFC.
” THE Knights of the Gall were also present, they improvised a sketch, it was very funny,” explains Philippe Pardailhé.
Homemade sausages
For its cassoulet, Maison Pardailhé took advantage of its local products the freshest. The pig thus comes from the Comminges valley, and the beans, from Mazières.
“As we are primarily charcutiers, we made the sausages in the Cassoulet ourselves. I think it was this detail that we really liked.”
A won over audience
The public, won over, grants 80 votes out of 140at Maison Pardailhé, an overwhelming score allowing him to obtain the public prize.
“The public prize for me and the jury prize for the Pullman hotel in Lyon. We were told that the two prices were equal,” says Philippe Pardailhé, happily. ” We are very happywe even installed our price on our stand at the Victor Hugo market in Toulouse. »
Ready for the 2026 edition…
At the end of the competition, “Damien Comolli, the president of the TFC, took the floor to announce that the 2026 edition of the championship would take place at TFCwith even more people. And as I am one of the winners, I will participate… as a juror! », proudly reveals Philippe Pardailhé.
