The Cour des Consuls Hôtel & Spa took place within the Hôtel Tornié-Barrassy and the Hôtel Dassier, two 18th century private mansions which were brought together during work which began in 2009. The buildings are clad in pink bricks of course, like Toulouse. Property of the Cité Hôtels hotel group created by the Pujol family, it was the subject of a restoration completed in 2015. It was the decorator Chantal Peyrat who knew how to infuse the premises with a welcome touch of design and contemporaneity while preserving the elegance of classic decor codes. The hotel has joined the MGallery collection which highlights establishments which have historical elements. Rich in remarkable heritage such as the monumental fireplace dating from the 16th century with sculpted medallions, the staircases and their ornate ironwork banisters, the hotel is open to the public during guided tours during the European Heritage Days. This 5-star hotel has 32 rooms including 6 suites, a spa, a gourmet restaurant and a renowned bar. Its interior courtyard, the true heart of life, has established itself as a trendy spot for Toulouse residents, lively all day long.

Located 100 meters from the Pont-Neuf (in fact the oldest bridge in Toulouse), from the Quai de Tounis which runs along the Garonne and offers a splendid stroll along the river (at 112, Quai de Tounis, don’t miss the house where lived the singer and composer Claude Nougaro), a few steps from the Assézat mansion, one of the most famous Toulouse monuments of the Renaissance, which houses the collections art by Georges Bemberg, the hotel La Cour des Consuls Hôtel & Spa Toulouse – MGallery ticks off all the advantages of a privileged location. It’s up to you to discover the pink city on foot: for foodies, the Carmes market which offers the best of the South-West region; Saint-Étienne Cathedral and its adjacent streets with beautiful shops; for those looking for a quiet break, head to the Jacobins cloister. Don’t forget to cross Place du Capitole and head along Rue du Taur to the Saint-Sernin basilica, a masterpiece of Romanesque art dating from the 11th century. Then, treat yourself to a drink in Place Saint-Pierre, very popular with students, and cross the bridge to be surprised by an exhibition at the Abattoirs, a contemporary art museum located on the left bank.

The decor

It is signed by the decorator Chantal Peyrat who redesigned the hotel in design mode. In the rooms, several atmospheres are available: contrasts of gray and black, checkerboards, stripes, patterned tapestries, shades of beige… The graphic effect is stylish. Here, metal which highlights the furniture, padded headboards, there, lounges with leather club armchairs, bottle green Chesterfield sofas, armchairs with enveloping backs. Parquet flooring, carpets (often dark or black), wall woodwork… The decorator was able to manage the volumes brilliantly and above all highlight the listed historical elements of the hotel. At the gourmet restaurant Le Cénacle, the monumental fireplace dating from the 16th century faces a large format reproduction of Dinner at Emmaüs of Caravaggio. As for the two main staircases, their banisters are classified: one represents the serpent offering the apple to Eve, the other, classified since 1927, is made up of oval motifs with a laurel flame in their center, oak garlands, intersecting torches, a work of ironwork dating from 1778 and signed by the artist Joseph Bosc. The two staircases are magnificently highlighted, one thanks to a monumental and airy chandelier, the other highlighted over the entire height of the stairwell in a daring duck blue. The spa is dressed in beiges and off-whites, enhanced with light wood and warmed by the exposed red brick, a refuge of tranquility.

The rooms

Very spacious with high ceilings and large windows covered with black taffeta curtains. Some overlook the interior courtyard, others overlooking rue des Couteliers. We will favor those on the courtyard because they are quieter. The decoration is refined, contemporary but remains cozy with small armchairs and a beautiful desk. They are all equipped with a television, a coffee machine, a minibar, a safe, and an ironing board with iron, which is greatly appreciated, but which is expected for a five-star hotel. The bathrooms are spacious, dressed in brown marble veined with beige, with a walk-in shower or bathtub. The amenities are from the Gemology brand. On the upper floors the rooms are brighter and the duplex suites with a surface area of ​​84 m2 have a balcony terrace.

The staff listens. To relax or have a drink, we quickly adopt the rattan armchairs in the interior courtyard, very pleasant during the off-season. The decorated library british remains another option for relaxation. The 250 m2 spa – open to external customers – is superb, with a fitness room, hammam, sauna and treatment cabins. It is very bright in white and beige tones, arranged on two levels. A true cocoon of softness where treatments from French brands Gemology and Graine de Pastel are provided. The latter, based on naturalness and the pastel plant, is formulated and manufactured in the South-West. For customers traveling by car, parking (paid) is available. Pets are allowed for an additional fee.

At the table and at the bar

The hotel has a gourmet restaurant Le Cénacle, today under the leadership of chef Hippolyte Peters Desteract. This table is installed in a listed setting with its monumental fireplace with coats of arms, its reproduction of the Dinner at Emmaüsits ceiling with period beams. The chef delivers a light-hearted score, sustainable cuisine magnifying the product. The 8-course menu (139 euros) is a wonderful invitation to a unique taste journey. The hotel has a bar, Le 46, very popular with Toulouse cocktail lovers. We curl up in leather armchairs, or in the interior courtyard we sip revisited cocktails (12 euros) or signature cocktails (15 euros) like the astonishing Xipe Totec made with mezcal madre, dry curaçao, yellow pepper juice, of lime, olive oil with basil, accompanied by a small menu of tapas to snack on. On sunny days, the interior courtyard comes alive in a beautiful atmosphere with live music sessions.
