Their cuisine is renowned. In the new special issue “109 chef recipes”, published by Gault et Millau, several restaurant chefs in Nice and the Alpes-Maritimes are cited.
The book allows us to “Shine the spotlight on 109 passionate chefs who have helped to revitalize the French gastronomic scene over the last 18 months”. Here are the establishments that are worth a detour without putting too much strain on your wallet in our department.
“Panisse” with Luc Trochon in Nice
Several chefs have been rewarded by the famous Gault et Millau guide in its special issue “109 chef recipes”. Luc Trochon is one of them. He opened his restaurant “Panisse” in December 2023.
Actu Nice had also announced it in an article. He offers a card to very affordable prices26.90 euros for the menu every lunchtime with starter, main course or main course, dessert. The cuisine is simply excellent, fresh and seasonal. Enough to discover gastronomy without breaking your budget.
“We rediscover duck breast with a finesse of taste enhanced by this citrus sauce and duck juice whipped in butter and reduced with, as a subtle touch, the power of Madagascar pepper,” notes Gault et Millau. In the special issue, Luc Trochon presents his recipe “Marinated salmon, beet pulp”.
“Pinpin” with Anaëlle Maizières and Fabien Benhamou in Nice
Opened in April 2023 rue Martin Seytour in the port district of Nice, this restaurant with very creative cuisine has been distinguished. With a rating of 12/20 by Gault et Millau, it is run by two co-owners but it is the two chefs who are rewarded today: Anaëlle Maizières and Fabien Benhamou.
A striking duo that offers a fresh and inventive taste experience. Classic dishes are revisited and inspired by ingredients from our region. “Pinpin” presents itself as a “neo-brasserie” on the menu, again very affordable. The dishes are between 14 and 21 euros. A menu from 19 euros is offered every lunchtime.
In the special issue, they detail their “Dolce Vita Niçoise” recipe, based on peppers, anchovies and ricotta.
“Agapé” with Guillaume Winterstein in Cagnes-sur-Mer
Located on the Promenade de la Plage in Cagnes-sur-Mer, the restaurant “L’apagé” opened in November 2023. At the helm of the kitchen: Guillaume Winterstein. The chef is also cited in the special edition for his recipe entitled “Piglet variation, stuffed zucchini flowers”.
The establishment, co-managed with his partner Morgane, offers “traditional French cuisine” but sometimes enhanced with “23 Asian spices”. Its products come from the Provençal market in Antibes. Here the dishes are delicious and prices far from gastronomy. However, the experience is just as exceptional.
The discovery menu (starter, main course, pre-dessert and dessert) is 49 euros per person. A midday lunch is available for 29 euros.
“The Garden” with Flavien Fortuné in Levens
Since November 2022, Flavien Fortuné and Chloé Garcin have been delighting the taste buds of Levensois. With their restaurant “Le Jardin”, 25 km from Nice, Gault et Millau highlights its Mediterranean cuisine. In the special issue, the chef presents his recipe for “Feta, mint and hazelnut beetroot salad”, which is very easy to prepare at home.
Flavien Fortuné created his own vegetable garden to supply his menus with vegetables, aromatic herbs and edible flowers. We eat a starter, a main course and a dessert. for only 36 euros. “Le Jardin” is not really a restaurant like the others since it is in fact a “boutique restaurant”. “Everything is for sale except the cook,” is ironically written on the site.
It’s spot on for Gault et Millau: “What if this was ultimately the recipe for happiness? A couple in unison with their desires, a small bucolic village a few kilometers from the hustle and bustle of the city, with a house as blue as the sky.”
