“Shining the spotlight on 109 passionate chefs who have helped to revitalize the French gastronomic scene over the last 18 months.”

It is with this stated objective that the famous gastronomic guide Gault et presented its new special edition soberly titled “109 chef recipes”, in which young restaurateurs are highlighted and share their best dishes.

They are this year six Lyon chefs to have been spotted, compared to four last year.

Circle – Bastian Ruga (Lyon 1st)

Opened in October 2023, the Circle gourmet restaurant offers an “experience that goes against the codes of classic gastronomy. ” Here, no cardbut a blind journey guided by chef Bastian Ruga and head waiter Agathe Drevet with cuisine “mainly plant-based, inspired by travel and French gastronomy, with a backdrop of hip-hop music”.

Six-course menu at €65, eight-course menu at €85.

Bacchanales – Jean-Baptiste Magno (2e)

The gourmet restaurant Bacchanales, with its impressive wine list, is dedicated to “modern cuisine highly inspired by the great French cuisine, that of Lyon mothers as well as that of Escoffier or even the great Carême”. We also find a “obvious Italian touch”chef Jean-Baptiste Magno having his roots “south of the boot”.

Seven-course menu at €69, three-course lunch menu at €45.

Brutal – Alban Joriot (2nd)

Having visited the Têtedoie restaurant and Christian Roure, Alban Joriot opened the gourmet restaurant Brutal with two long-term friends, equally passionate about cooking. The name of their establishment was chosen “in homage to the raw and authentic appearance local products that they wish to highlight, all while offering “simple cuisine”.

Three or five course menu at lunchtime at €28 or €48, three, four or six course menu at €45, 55 and €70 in the evening.

Bistrot Bouille – Olivier Kohen (3rd)

Bouille is a French bistro that “brings friends together” around a “warm table where we rediscover the local dishes of our childhood. » “Every day a new menu, every evening a new surprise” with recipes developed seasonally and using fresh produce, promises the establishment, whose chef is Olivier Kohen.

From €18 to €28 for lunch, suggestions and à la carte choices in the evening.

Söma – Sarah Hamza (5e)

Opened in February 2024, the modern bistro Söma is located in Old Lyon with chef Sarah Hamza at its helm. Its restaurant promises “a cuisine full of colors and Mediterranean flavors, but not only that”, in an intimate setting.

Count between €15 and €20 for a dish.

Osteria Matto – Thomas Asti (6e)

Osteria Matto and its chef Thomas Asti offer traditional Italian cuisine. But sans pizzas!

“The idea is to hunt down the best recipes in the market before offering them to you on the plate. Like Mamma, we look for the best products and work on them simply to get to the essential: the quality of the product,” explains the establishment.

Expect between €16 and €25 for lunch and up to €28 for a dish in the evening.
