The work lasted several months. In a few days, the 35th restaurant of the Signorizza brand will open its doors in the Sistrières area.

“Honestly, it’s a beautiful area. And we received the best welcome possible. France Travail, the Chamber of Commerce and Industry and the Region have been valuable and relevant partners for our installation. The people of Cantal have a real sense of welcome. » The future manager of the new restaurant, which will open its doors between two brands Burger King and Le Bureau in the Sistrières area, is full of praise.

“I have been running the Signorizza de Brive for several years. But I really like Cantal. So when we were offered this site, this location, I didn’t hesitate for long,” explains Gaël Rouxel. The Signorizza brand, a restaurant serving Italian specialties and pizzas, belongs to the duo of Angers entrepreneurs, Erwan and Sandrine Rouxel.

Family affair

“He’s my brother and sister-in-law. We are of Breton origin and we like working as a family. » The Aurillac restaurant will therefore be the 35th opened since the creation of the brand in 2018. Five new establishments should see the light of day by the end of the year.

“It’s a franchise, I’m the manager. Adrien Falières will be the director (read opposite). We recruited the team, made up of fifteen people for four weeks, to be operational to the brand’s standards, explains Gaël Rouxel. They are already effective. »

Practical. The restaurant is open seven days a week, from 11:45 a.m. to 2 p.m. and 5:30 p.m. to 10 p.m. on weekdays, until 11 p.m. on Saturdays and Sundays. Takeaway sale on part of the menu.

“It’s an Italian restaurant. Our core business remains pizza and we have, visible from the entire room, a wood-fired oven to cook them. It’s also an entertainment, a permanent show,” underlines the manager. The decoration is warm, in bright colors, with an omnipresence of wood. And in the background, an Italian radio:

The room, approximately 200 m², can accommodate 120 people “and around fifty on the terrace”. On the menu side, “around 30% of our supplies come directly from Italy. We offer Italian specialties of course, but also a dish of the day, or even artisanal ice creams made according to our own recipes,” emphasizes the manager.

Adrien Falières, new director

Adrien Falières is not unknown in Aurillac. Although he was born in 1983, in Verdun (Meuse), his father is from Roannes-Saint-Mary. “My whole family is here. I live in Cantal,” underlines the solid retired pillar. Because the man began his professional rugby career in Pro D2 at Stade Aurillacois in 2001. He left the club in 2004 to join ASM Clermont which then played in the Top 16 (the Top 14 began in 2005). He ended his career in 2014 at Stade Rodez Aveyron. “After rugby, I was a portfolio manager at an insurer. But I decided to change careers. I went to Paris, became a waiter and learned and worked my way up to managing a brasserie. In Aurillac, he will be the restaurant manager.
