Summer is fast approaching and with it the pleasure of cooking on the plancha! Discover the recipe for white fish with aromatic herbs, olives, lemon and avocado à la plank from Thierry Cornuet, aka “Big T”, chef and author of the book The art of barbecue.
The ingredients of the recipe
- 400 g of white fish such as cod
- 1 liter of olive oil
- 4 red onions
- 2 lawyers
- 1 clove of garlic
- 250 g pitted black olives
- 2 yellow lemons
- 1 bunch of chives
- 1 bunch of parsley
- salt
The steps of the recipe
- Zest the lemons and slice the zest.
- Crush the olives, slice the onions and chop the herbs.
- Cut the avocados in half, salt them and place them on the hot grill.
- Cut the fish into sections representing an individual portion and leave it at room temperature for 30 or 40 minutes before placing it on the plancha to avoid thermal shock.
- Mix the zest, pieces of onions, olives and herbs. Add everything to a bowl filled with olive oil.
- Snack the fish on the plancha then place the olive oil, herbs and condiments mixture on top like breading.
- Serve with the roasted avocado.
