The Japanese version of cheesecake reveals a lighter texture and a less sweet taste. Far from the creamy density and without a biscuit base, it comes in the form of a round soufflé cake, with an almost mousse-like consistency. After discovering it on social networks, Helen Yau was finally able to taste Japanese cheesecake during a trip to Osaka in November 2019. Falling under the spell of this specialty with its comforting texture, she decided to open a store in Geneva, where she has lived since her adolescence.

Originally from Hong Kong, the forty-year-old studied mathematics and computer science applied to human sciences, then completed with a master’s degree in educational sciences in e-learning. After working in catering, teaching and tourism, she now works in a medical company that manufactures 3D-printed metal orthopedic bone implants. Helen decided to give her pastry a solidarity and social dimension, by also making it a project for the reintegration of who are victims of domestic violence.
