Unlike JackFlat BBQ in , the Sherbrooke branch will specialize in what we call in the restaurant industry, smash burgers.

“We are going to come and crush the meatball on a hot plate so that the cake becomes crispy on the outside, but that it remains juicy, explains Cédrick Vanier, one of the co-founders of the banner. I put about 800 hours into developing the burger. It’s really our recipe.”

The restaurant concept will be inspired by the world of country music.

“It’s everything rodeo and everything related to the equestrian world, line dancing and country music,” he emphasizes. I update the song list myself every Friday. We’re going to organize line dancing evenings.”

Cédrick Vanier’s partner in the adventure is Jacques Gaspo, known in particular for Moomba, La Belle & La Bœuf, Souvlaki Bar, Gatto Matto, Carlos & Pepes and Foodtastic. His more recent projects include Gaspesie Brasserie Gourmande, JackLeCoq Poulet and Sergiolino Restaurant.

An upcoming opening

Cédrick Vanier has not yet identified a date for the opening of the restaurant. Work on Galt Street in recent months has considerably slowed down the project.

“We really want to do it the right way,” he explains. We are very perfectionists and the stronger the enthusiasm, the more we want to meet expectations. It’s the very first of a new concept, it’s the little brother of JackFlat BBQ.”

Three new JackFlat BBQ will open in Quebec in 2025. The Sherbrooke restaurant could be the very first in a series of 20 branches for JackFlat, Le Dernier Burger.
