900 000 euros ! This is the tidy sum invested in recent months by the city of Narbonne (hears) to rethink the entire operation of the large central kitchen. The teams working there are now preparing up to 1200 meals per day.
A complete reorganization
Since the start of the school year after the traditional All Saints' Day holidays, the young people of Narbonne have not seen the difference.
And yet, she is an adult. The entire operation of the imposing central kitchen has been redesigned.
The objective pursued is that meals prepared on site are now also for students from around fifteen nursery schools. Municipal officials are now preparing more 1200 meals per dayagainst 350 in recent months.
New recruits
Three new cold rooms were installed in existing municipal premises. The layout of all premises has been improved. This made it possible to create a new diving area.
Large capacity frying pans as well as two insulated vehicles new ones have been purchased in recent months. A large packaging area for deliveries has also been built. Three additional cooks were also recruited to strengthen the existing team and enable successful preparation of the 1200 daily meals expected.
Ever more local meals
« 90 % dishes offered every day to young schoolchildren, are based on raw and fresh products andpremium ingredients», assures the city of Narbonne, on its website. The aim is to avoid as much as possible the use of industrial products.
The use of so-called healthy products is highlighted by the Aude municipality.
“To this day, 22% of products purchased are of organic origin. Half of them come from Aude producers», assures the municipal team on the city website.
