The unique terroir of Domaine des Feux Follets, located near the Saint-Laurent River, offers a microclimate that protects the vines from the vagaries of the weather. “The proximity of the river acts as a natural shield, delaying autumn frosts and spring thaws, which is essential for our grape varieties,” emphasizes Frédéric. Here, plants adapted to the Quebec climate, such as Frontenac blanc and Petit Pearl, are cultivated with care to fully express the richness of this particular terroir.

The owners have chosen ceramic barrels imported from Italy, an innovative alternative to traditional oak barrels. “They allow us to preserve the purity of the aromas without altering the taste of the wine with woody notes,” he explains. The estate also relies on ecological practices and natural methods to maintain the vines. “We use the local wind to dry the leaves, which reduces the risk of disease and reduces our need for fungicides,” he says.

Techniques such as “combing” improve the aeration of the bunches and optimize their exposure to the sun.

Domaine des Feux Follets embodies a new generation of winegrowers, reinventing the Quebec wine industry by confronting climatic challenges. “We want to demonstrate that Quebec can produce high-quality products, even in difficult conditions,” declares the owner with determination.
