For this new week of competition, the candidates were judged by the Meilleurs Ouvriers de … An additional pressure which pushed them to surpass themselves. Ingenuity, technique, balance, every detail counted.

Twenty minutes to make the most beautiful soufflé omelette, and not one more! For this new event, we had to impress the Meilleurs Ouvriers de France with… an omelette. Yes, but not just any one! A lot of technique was required to obtain the lightest and creamiest texture possible.

Although seemingly simple, the soufflé omelette is actually complex. “These are eggs whipped up like a mousse. We wait for it to be puffy, soft, when you put your finger on it, it must have this suppleness, and it must keep a little creaminess inside.“, explains Gilles Goujon, chef and Meilleur Ouvrier de France.

There is a lot of pressure working for the Meilleurs Ouvriers de France. Guys, these are war machines of perfection and excellence“, confides Bryan, one of this season’s Belgian candidates.

It’s important to have a good kick to incorporate as much air as possible. I beat my eggs by hand so that they can rise gradually and that it is very homogeneous. In this event, it is the details that will differentiate us“, he emphasizes, focused on each of his gestures.

My arm is paralyzed

The challenge“, he continues, “is to have a device tight enough so that air does not escape when cooking, otherwise, it is flat. If it’s flat, it’s not blown. And if it’s not blown… It’s not blown“.

Whisking eggs is not a simple thing. After a few minutes, Bryan seems to get tired. “My arm is starting to feel a little numb. It’s quite physical. What scares me is having to go to an elimination event“, he explains, worried.

Bryan is the only contestant who beat his eggs by hand, did that make a difference? Yes, it actually paid off. Thanks to this technique, the Belgian candidate passed the test with flying colors.
