At the beginning of December, the Lyon international competition awarded a gold medal to Pascal Bourvenof Plouégat-Guérand (Finistère) for its duck liver mousse.
A prestigious award for the peasant butcher of the Saint-Laurent farma deserved distinction which follows a first silver medal for its garlic sausage, won in 2022 at the Agricultural Show in Paris.
This is the first time that we have presented our liver mousse in a competition. We always have the same recipe with an excellent basic product, the duck that we bring from the Landes.
The Lyon international competition has existed for a long time and was until now “solely devoted to wines. This year, it opened up to charcuterie.”
During the Lyon competition, 315 categories of cold meats were represented. Several other products from Ferme de Saint-Laurent, although they did not win medals, received very good marks.
“Our customers have the last word”
It’s no small thing to be rewarded in a city like Lyon, known for its charcuterie, one of the best in France.
La Ferme de Saint-Laurent once again has the opportunity to showcase its know-how: “This shows thatwe work in the right direction. We enjoy the challenge! And participating in these competitions requires us to be rigorous and of high quality in our products. But it is our customers who have the last word. »
