At 21, Leelou has already sold 1,000 liters of soup in Oise

At only 21 years old, Leelou Bliard, young entrepreneur originally from the Marissel district in , gives new life to a traditional dish with his company Allo Soup.

Founded in December 2023, Allo Soup stands out for its artisanal, organic soups made from local vegetables from organic or sustainable farming.

Soup, a family story

This project is not the result of chance, like Obélix and the magic potion, Leelou fell into the soup from a very young age: “ Since I was little, I have been immersed in soup. My mom, Valérie, prepared it for us almost all year round (laughs). I wanted to start a business and it was therefore quite natural that I gravitated towards this product. ».

Local ingredients for a quality soup

The specificity of Allo Soup lies in the exclusive use of local products: “I said to myself that it would be stupid to produce soups in Beauvais and go get the ingredients on the other side of the planet“. Leelou works with several producers in the region, such as the Ferme du Chassy in Esquennoy or the Senantes farm, but also adapts its supply according to the availability of each market gardener. “ I am in contact with the majority of local market gardeners, which allows me to offer seasonal recipes, with hot soups in winter and gazpachos in summer. “, she explains.

Leelou produces his soups “in vintage”, he needs no less than 350 kg of vegetables to create 500 jars of soup, a production which requires a significant amount of work: “I developed a taste for cooking at a very young age, my parents made us participate in designing the meal every Sunday morning.“.

“On site” or to take away

It offers its soups in the form of sterilized 80 centiliter jars, allowing a two-year shelf life, an ideal option for consumers concerned about the quality and durability of the products. “ By using glass, reusable and recyclable containers, I really want to follow through with my ecological approach. », she adds.

Leelou is also present in numerous fairs and markets, she notably participated in the first agricultural fair of Beauvais, in the department's farmers' market and can regularly be found at local markets such as those of Saint-Paul, Saint-Witz , Beaumont-sur-Oise, Rainvillers or even Gouvieux: “At events and markets, I offer the soup for tasting for sale on site in recyclable cups.“.

Leelou Bliard and her family participated in the Oise farmers' market, organized at the Beauvais department hotel in October 2024. Charles Locquet, departmental advisor and vice-president of the Oise CCI, came to welcome this initiative.

Flavor broths that appeal to all generations

Among the many recipes that Leelou has developed, her best-seller remains butternut soup: “It is a winter squash particularly appreciated for its creamy texture once cooked and its slightly sweet taste which gives a mild and sweet soup.“. Among his other suggestions, the choux’choux recipe: “Cabbage soup can be scary for some people, but I made a cabbage mixture and surprisingly it really appeals.“.

For the less adventurous, Leelou also offers more classic soup recipes such as spinach or a soup made from a mix of pumpkin and carrots. In the future, the young entrepreneur would also like to offer more exotic soup recipes such as Chorba, an Algerian meat soup recipe: “ The good thing about soup is that I'm not limited. There are Western, Eastern, Asian recipes… There are so many possibilities!

A healthy alternative to fast food

One of Leelou's motivations is to offer a healthy alternative to fast food. ” While browsing the fast delivery offers on the apps, I realized that there was a lack of real healthy options, only fast-food type catering was offered. My goal is to offer fast, but quality food. “, she confides.

More than 1,000 liters of soups sold

What does the 21-year-old young woman say to evil spirits who tell her that soups are old-fashioned and grandmother's recipes: “Soup affects everyone, we have been eating it since we were little. Today, especially on social networks, we can clearly see that people are more interested in the quality of what they eat for health reasons, soup is a good and healthy food that meets their requirements“.

The sales figures for Allo Soup will not contradict his allegations; in the space of less than a year, Leelou has already sold more than 1,000 liters of soup.

Its soups attract a varied clientele, ranging from families to students, and even the elderly, all seduced by the authenticity of its products:

I didn't expect to attract a student clientele but I think they like the idea, they don't always necessarily have the desire or the space to prepare soup at home. It's the same thing for seniors, I have grandmothers who tell me I would eat soup but I don't want to prepare one, it's large quantities and I'm all alone at home… the bottled format meets this need“.

On the price side, Allo Soup although offering artisanal food from local products remains at non-prohibitive prices, Leelou in fact offers its sterilized 80 cl glass jars at €8 each, for tasting on site, different formats exist but the smallest bowl will cost you €3.50.

Allo Soup, the start of a new Beauvais success story?

The young woman currently in sales for a major surveillance system brand would like to be able to make a 100% living from her new activity in the future. Leelou has no shortage of dreams and ambitions: “I would like to be able to make myself known in the Oise and develop several points of sale, particularly in Beauvais, invest in a food truck and why not create a franchise one day?“.

The Pistou soup recipe, Allo'Soup style

Leelou has agreed to share one of her recipes with us, take note, cooks!

Ingredients (for 6 people)

• 2 courgettes

  • • 2 potatoes
  • • 2 carrots
  • • 2 peeled tomatoes
  • • 2 cloves of garlic

• 200 g of green beans

• 200 g of white beans

• 200 g red beans

• 1 onion

• 150 g of small pasta

• Salt, pepper and bouquet garni

For the pesto:

• 1 bunch of basil

• 4 cloves of garlic

• 1 peeled tomato

• 100 g of parmesan

• 10 cl of olive oil

Preparation

• Cook the vegetables: brown the chopped onion and garlic, add the chopped vegetables, the bouquet garni, and cover with water.

• Leave to simmer for 45 minutes.

• Add the tomatoes and pasta: then cook for 10-15 minutes more.

• Prepare the pistou: crush the garlic, basil and tomato, add the oil and parmesan to obtain a paste.

• Assemble: Serve the soup hot with a spoonful of pistou.
