With a recipe that skillfully mixes traditional codes with a touch of contemporary creativity the star pastry chef succeeds in bringing us an absolutely exceptional Paris-Brest with a crispy and golden choux pastry which contains an incredibly light praline cream, enhanced by a touch of fleur de sel.

In short, we are dealing with a real delight that is as beautiful as it is delicious.

This absolute genius of pastry making never ceases to amaze us with his creations, and his version of Paris-Brest did not fail to amaze us because it is just crazy, both super elegant and mega gourmet.

But what makes Paris-Brest so special is the mix of textures with a light and frothy cream of egg, a heart of pure hazelnut praline that directly makes us salivate and pieces of hazelnuts and caramelized almonds for crunch. All topped with choux pastry with a golden cracker to die for.

In the mouth, it's a killer with the praline which brings great intensity and gives depth to the whole.

3. Union Boulangerie: the charm of a neighborhood bakery combined with excellence

Don't be fooled by its appearance as a simple neighborhood bakery: Union Boulangerie, founded by Charles He et Maeva Manchonhas many surprises in store.

And among these there is indisputably their Paris-Brest which is unanimously acclaimed thanks to its generosity and its creamy almond-hazelnut praline cream.

But of course, it doesn't stop there because if you still have a little room for other treats you can also try their succulent melting chocolate babka and their crunchy chouquettes.

All served with a smile by a young and dynamic team, for a most pleasant gourmet experience.

A dessert of remarkable finessewhich is undoubtedly among the best in the capital.

5. L’Équilibre: Paris-Brest in a historic setting

L'Équilibre is THE spot that all foodies should absolutely know! Tucked away at 108 rue Blomet in the 15th, this bakery-pastry shop will amaze us as soon as we cross the threshold.

Normal, the shop is quite simply classified as a Historic Monument! We flash directly on the wall frescoes and the ornate ceiling which immerse us in the atmosphere of 1889. But the highlight of the show is obviously the Paris-Brest house.

A real gem this Paris-Brestwith its hazelnut praline made on site which gives it an incredible taste. The choux pastry is extremely well controlled, crispy as can be and the praline cream is mega smooth.

In short, pure happiness in the mouth! And then this Paris-Brest is beautiful, with its well-rounded traditional shape.

The little extra that we really like at L'Équilibre is the warm side of the place with a few tables to enjoy on site and a caring team. Frankly, it's one of our favorite places to enjoy a competitive Paris-Brest without breaking the bank. To be tested urgently!

The bonus – Jeffrey Cagnes: absolute favorite for this crazy Paris-Brest

Our huge pastry crush of the moment is without hesitation the Paris-Brest by Jeffrey Cagnes! This guy is a true genius for creating ultra-gourmet pastries without drowning everything in a ton of sugar.

His Paris-Brest is just perfect, with a super light and creamy cream to die for. It has clearly become one of its signature specialties that cannot be skipped.

But for Jeffrey Cagnes, there is more to life than Paris-Brest! His other creations are just as amazing.
