Lücas Spinelli was at a crossroads. This talented 24-year-old pastry chef could have worked in a large Parisian palace alongside a prestigious chef.

His awards (Best Apprentice of France 2018, Rabelais of Young Talents 2019, vice-champion of France 2022, vice-champion of Europe at Worldskills 2023), his ten years of experience, his extensive training in the bakery, the chocolate factory and at the ice cream shop, his inspired creations within the Senate Brigade made him a sought-after artisan.
But the Pontoisian preferred to launch into entrepreneurship, after the success of his pop-up store between November 2023 and January 2024 in Pontoise.
On Wednesday December 11, 2024, its boutique will open at 1, rue Heinrich-Hertz, in the Acti'Parc des Portes du Vexin which faces 30, rue Ampère, in Ennery.

“Our sales space will look like a showroom. Our customers will be welcomed and advised as close as possible to the products: jams and spreads on the right, desserts and pastries in the center, orangettes and chocolate bars on the left,” reveals Lücas, who will be supported by a saleswoman and an apprentice in his huge laboratory of 300 m²,
featuring distinct creative spaces and a ceiling height of 10 meters.
“Our laboratory will be visible to customers who will be able to discover part of our artisanal know-how and the contribution of certain rare machines such as our 85 kg mixer which ensures delicate grinding of hazelnuts and conching of nuts for 8 hours. »
High end
Its boutique, open Wednesday to Saturday from 10 a.m. to 7:30 p.m., will offer tasty surprises in addition to thirty-five flavors of jam, fifteen varieties of chocolate bars, four desserts, Christmas logs and essentials (Paris-Brest, Parisian flan, cookies).
The establishment, which already delights ten resellers in Paris and has an online sales site and delivery and click & collect services, values the quality of local products, constantly new products and limitless creativity. .
High-end, its products remain suitable for all audiences. From €8 for a pot of jam to €38 for a cake for eight people.
