Chef Yves Jehanne is never short of projects. Finalist for La Meilleure Boulangerie de France on M6, he has just opened a fast food outlet in front of his establishment in Balma.
The premises are located in front of their patisserie bakery, at 10 avenue de Toulouse, in Balma. It was occupied until then by a pizza maker. From this Tuesday, November 26, Yves Jehanne and his wife, Anaïs Chabreuil, have decided to take over this space to transform it into a foodcorner.
Named Rub's, in homage to their 3-year-old son, this corner offers gourmet products, as an extension of their establishment. “We have put in place a healthy and local offer of take-away products, for lunch and dinner, from Monday to Saturday,” explains Anaïs Chabreuil.
“We will prepare burgers, sandwiches, salads, wraps, quiches, poke bowls, hot dishes (stewed, lasagna, chicken fries, paella, etc.) which will change every day. All the breads will come from our bakery,” explains Yves Jehanne , who for the occasion will be able to highlight all his qualities as a cook. “Before pastry, I was a cook. I have a BEP and a Bac Pro in cooking,” he recalls.
The combination of Foodcorner Rub's and the pastry bakery makes it possible to offer a complete offer, from the starter to the desert, including the main course. “For the holidays, we developed special menus from the aperitif (foie gras lollipop) to the dessert (logs) including the stuffed capon, the truffled puree, the stuffed cheeses…”, Yves Jehanne is already delighted.
Barely two weeks ago, he won second prize in the competition for the Best Sandwich in Haute-Garonne, “with a very traditional buttered ham, revisited with a very good conté, a good ham and mustarded butter.” It will be on the Rub's menu.
