Around ten professionals from all over were present at the 2emeetings of artisanal butchery to share the excellence of their know-how. Often perceived as a male sector of activity, because it is associated with physical strength, butchery nevertheless has many women who are passionate about their profession. Apprentices, employees or business leaders, they make the heart of city centers and markets beat, and participate in the preservation of recognized know-how.

Among these butchers, we find a very committed butcher, Sophie Perillat-Merceroz, manager of the Perillat & Co butchery in Faverges.

Crowned best apprentice in France in 2001, she launched with her husband, in 2013, a first company “La Passion des Viandes” followed by a second “Perillat & Co” in 2019, while being a trainer. A perfectionist and determined, she even inspired her son, who was also awarded the title of best apprentice in France in 2024.
