This is a new address in Saint-Germain-en-Laye (Yvelines) for all lovers of good products. At number 9 rue de Paris, the Iberico & Co boutique recently opened. This is the first in Yvelines. There are only four others, one in Pontoise (Val-d'Oise – dep. 95) and three in the South-West.
Two partners are at the head of this franchise located in the royal city: David Pombo and Ignacio Losada, originally from Portugal and Spain respectively.
“The store is the culmination of our meeting. In our fifties, we were looking to deploy a new idea and do a more personal business, returning to things on a slightly more human scale. »
As the name suggests, passing through the door of Iberico & Co is like projecting yourself into the gastronomy of our European neighbors.
A family of breeders from Salamanca
All the products offered in the store come from a family of breeders based in the province of Salamanca in Spain, having made Iberian pork – the black paw – their only specialty since 1918.
“The products spoke to me, I knew them, I had consumed a lot of them when I was a kid,” adds David. What attracted us is that we are really in a short circuit, with one and the same family which has been a breeder, producer of pata negra since three generations. »
“So, there is this family history, there is the passion for the product. Then, pata negra is a product that speaks to the customers of Saint-Germain who are used to having rather premium food services. »
100% Bellota ham
Iberico & Co offers a wide variety with the flagship product being 100% Bellota ham, considered by some to be the best ham of the world.
“These are animals that have lived in freedom and are only fed on acorns. And then there is also the refining, of course. We have pieces that are matured for between 3 and 4 years. »
The shop also offers all Iberian charcuterie based on pata negra pork such as lomo, chorizo and sausage.
“Afterwards, we will find more typical Spanish products, but which have a real clientele in France, because the French spend a lot of holidays in Spain too. »
The sobrasada, the cecina and the hornazo
Among these products, sobressade (or sobrasada), cecina, hornazo de Salamanca, but also typical cheeses like the Manchego.
“We make the bocadillo, the typical Spanish sandwich with the pata negra inside. This is our flagship flagship product which has an ultra-aggressive price at 6.50 euros. »
Finally, Iberico & Co also offers its cutting services on site for festive events: weddings, communions.
