In Mayenne, the bakery on Place Juhel has a new management team. Olivier Brochard and Jean-Marc Belliard, 48 and 49 years old respectively, have taken over the reins of this business called Le Fournel d'Alexis and run since 2011 by Sébastien Leprovost.
Since Monday, November 4, the artisanal bakery and pastry shop has also changed its name, the new identity is: Boulangerie du château.
A smooth transition
Olivier Brochard, who is one of the successors, is well known by customers since he was previously employed as a pastry chef-baker for five years. This way, the transition is smooth. Olivier wanted to join forces. Jean-Marc takes care of the management part. “We are going to reorganize and redevelop the sales and production area,” say the new managers who had a common objective: to buy this business. They kept the same team.
This has been strengthened to guarantee the same services. It is now made up of eight employees. All pastries, bread and chocolates are homemade. “I would like to launch a range of bread made from ancient wheat”, says Olivier.
