Thursday October 17, in the premises of the Vendée Bakery and Pastry Federation in Mouilleron-le-Captif, the annual competitions for the best pastry flan and the best chocolate éclair 2024 took place.
The jury, made up of three professionals and two consumers, evaluated the products blindly.
For the pastry flan, the number of entries decreased slightly (36 candidates), while for the éclair it increased slightly (also 36 participants).
Each of the products was rated out of 100. A precise list of ingredients was imposed. For the flan, “vanilla is the only authorized flavor, in order to put all competitors on an equal footing,” emphasizes Aurélien Allaizeau, president of the Vendée federation.
How to spot a good flan
Regarding the recipe for a good flan, “you must first make a good pastry, flaky or not. The choice of milk is also very important, but the most complicated thing is cooking: it requires around 45 minutes.”
A professional can quickly determine if the cooking time was insufficient, particularly by the appearance of the crust under the flan. “A flan cooks on the outside first. »
However, you shouldn't cook it too long either! “It’s a product that evolves a lot, everyone brings their own touch to it, creating a wide variety of flavors, making the choice all the more difficult! »

Pastry flan:
1is best pastry flan 2024 in Vendée: Lucette bakery, Les Sables-d'Olonne.
2e place: La Fabrik bakery, Saint-Gilles-Croix-de-Vie.
3e place: Airaud bakery, Montaigu.
Chocolate eclair :
1is best chocolate éclair 2024 in Vendée: La Fabrique à Pain, Chavagnes-en-Paillers.
2e place: Baba Éclair, Les Sables-d’Olonne.
3e place: O Alex's Delight, The Goose.
