It’s beautiful, it’s hot and just out of the oven! Thursday May 16, 2024, the first national competition for the best sandwich arrives on the square in front of Notre-Dame Cathedral in Paris Center, closing the 28th edition of the Fête du Bread, which will be kicked off by the mayor of Paris, Anne Hidalgo, this Tuesday, May 7. An event which bears the seal of the National Confederation of French Bakery-Pâtisserie and which will oppose 15 local championscoming from ten different regions.
Two Ile-de-France chances
Two representatives from Île-de-France will defend their chances on the Notre-Dame square: Maxime Sohier (Noisy-le-Grand) and François Poletto (Villiers-sur-Morin).
Each participant must prepare nine sandwiches : three vegetarian, three based on seafood and three with a meat ingredient. Each must weigh at least 220 g, with a loaf not exceeding 120 g.
The day before the competition, for one hour, the candidates will prepare their pasta and fillings. While on the day of the competition, they have 5 hours to produce their best sandwiches. Finally, everyone will have to write an argument to support their creation.
The baker from Puy-de-Dôme and president of the Auvergne – Rhône-Alpes baking region, Xavier Bordet, will be the president of the jury. It will be accompanied by a production jury and a tasting jury. Of course, in order to ensure fairness, each candidate will be assigned an anonymity number.
Sense of organization and hygiene during manufacturing, appearance of the sandwich, aroma and taste, balance of textures and chewiness, etc. The jury will evaluate the creations according to a scoring grid rigorous. And the winner will, naturally, be the one who obtains the most points. A heart stroke will also be awarded for each type of sandwich.
The announcement of the results and the prizes are then scheduled for 5 p.m..
