Despite rising costs and the uncertain economic situation, young chefs and seasoned restaurateurs continue to carry out ambitious projects throughout France, both gourmet restaurants and bistros. Here are thirty-five, newly opened or which should be inaugurated before summer.

Maison Michodière
Before the holidays, Hélène Darroze inaugurated this hybrid space which replaces Joia Bun, her shortened gourmet burger project. The multi-starred Landes chef transformed the restaurant into a creative workshop, but also a gourmet restaurant and event space, in a setting reminiscent of a chic apartment with open kitchen, created by Studio MVB and Olivier Castaing of School Gallery. She is thinking about new dishes with her teams but also organizes exclusive themed dinners by reservation for around twenty guests (signature menus, Moroccan, truffle, etc.).
