Born in Paris, the concept Ammon disembarks at Toulouse : This restaurant brand which offers blue cords “revisited” street food style will open its first franchise early 2025 in the Pink City.
A Parisian story… which begins near Toulouse
Amonē is a “cordon bleu bar” opened in Montmartre and which quickly made a name for itself in Parisian street food. But the concept germinated in a Toulouse spirit! That of its creator Guillaume Verlet : throughout his childhood, he enjoyed his grandmother’s cordon bleu, which she prepared for him at home in her kitchen in Castanet-Tolosan.
After a first part of his career at O’Tacos, the restaurateur, who settled in the capital, also wishes to open his own brand of ” French fast food » . From his Proust madeleine will be born Amonē: a completely invented word, a mixture of mame et grandmain other words “grandmother” in Occitan and Basque.
A revisited and nomadic cordon bleu
On the surface, the dish revisited by Guillaume Verlet, in the shape of a large stick, seems far from the conventional cordon bleu, composed of an escalope rolled around a slice of ham and cheese, then breaded. “What I wanted was a cordon bleu made from quality products, at a reasonable price, and with a sophisticated shape to allow on-the-go consumption,” explains the designer.
All Amonē restaurants offer the same menu, with three classics – the traditional “Gérard”, the “Brigitte” vegetarianand the “Babeth” without pork -, to which is added a seasonal reciperenewed every six weeks.

And maybe soon a Toulouse recipe? Jordan Perez is not against it. With his brother Vincent, he should soon open Amonē Toulouseon the side of Saint-Sernin in the heart of the City. However, “it is still a little early to confirm a location”, indicates the entrepreneur. If things go as planned, the inauguration should take place in the first weeks of the year 2025.
Jordan Perez and Guillaume Verlet have known each other for a long time. However, their common Toulouse origin is not the only reason which pushed them to choose the Pink City as the first regional stronghold of the cordon bleu Amonē way. “The Toulouse resident is greedy, he is curious. This regressive cuisine, we know that it will speak to him,” says Jordan Perez, enthusiastically.
Two new well-known partners in the food world
Building on his success in Montmartre “with continued consumption for two years”, Guillaume Verlet recently opened a second restaurant in Belleville and now plans to develop through several franchises. After the first two openings,soon in Toulouseand in Levallois-Perret (in the Paris suburbs), other Amonē should see the light of day on the national territory.
In this deployment, the restaurateur can count on a famous duo of food influencers: Tev & Louis, aka Benoît Theveny and Louis Szajner. Initially producers of content around Japanese culture, the tandem reinvented itself as a culinary critic with its “We judge…” videos (sushi, Léon de Bruxelles… or even cordon bleu).
Their joint channel has more than 610,000 subscribers, and separately, Tev “ICIJapon” and “LouisSan” each exceed one million followers. A windfall for the young brand Amonē, which is delighted to now count them among its investor partners.
