Good news at the Symbiose restaurant in Cabourg (). Less than a year after its opening, the establishment was rewarded by Gault & , its chef Charles-Antoine Jouxtel received the “Great of Tomorrow” prize on the occasion of the release of the 2024-2025 edition . “We didn’t necessarily expect it, not so quickly” notes the young chef, still surprised by this announcement, “it’s something which, for us, is a real source of pride”.

The Cabourg restaurant thus received two toques from Gault & Millau and a score of 13.5/20, “which, for an opening, is something quite remarkable” recognizes the chef. In the process. A happiness that never arrives alone, the latter was invited to the prize giving ceremony for the Norman winners, last Monday in Deauville. Among the twelve trophies awarded on this occasion, Symbiose is the only winner in to be awarded the “Great of Tomorrow” prize.

“A work of several years”

“It rewards work over several years,” specifies Charles-Antoine Jouxtel, who recalls his career “of more than ten years with great chefs,” associated with that of his partner Charlotte Schwarb, “who worked alongside starred chefs for several years as a sommelier. I think Symbiose is the culmination of these years. We try to do something that suits us, that resembles us. It’s not the reward as such that will encourage us to continue, because we do what we love, it’s more a thank you. We won’t give up, with Charlotte and the team, we will go as far as we can go. This is the beginning, we are very happy and very proud.”

Barely a year after its opening, the restaurant located a few steps from the Grand Hôtel de Cabourg is already enjoying great success, “people come twice a month: to test our gastronomic side, then for the wine bar, and vice versa. versa.” A clientele mainly coming from “Deauville, , and even ”.
