Georgiana Viou

She is the chef of the ROUGE restaurant in Nîmes (1* Michelin). She was born in Cotonou. In 1999, while dreaming of becoming a conference interpreter, she left her native Benin and continued her studies in foreign languages ​​at the Sorbonne, but her other passion, cooking, gradually established itself through daring, chance and meetings.

After landing a job in a communications agency in , she entered the world of gastronomy during several culinary competitions where her instinct and energy hit the mark. Everything came together: she multiplied her experiences in large Provençal and Parisian houses then, in 2011, decided to strike out on her own. The Phocaeans then discovered his cuisine, anchored in the Mediterranean and animated with Beninese touches, first at L’Atelier de Georgiana, then Chez Georgiana and at La Piscine.

Her universe quickly attracted the attention of Gault & which, on two occasions, awarded two toques to its establishments and selected it among the 2015 Young Talents. In 2021, while she flourished on the piano of ROUGE, she received, always from the yellow guide, the prestigious “Grand de Demain” trophy. In 2023, it’s the consecration: the MICHELIN Guide grants one star to ROUGE.

Yohan Lastre

Yohan Lastre, born in 1979 in Nîmes and raised in Saint-Mamert-du-, was immersed in gastronomy from his childhood thanks to his mother and grandmothers, who passed on their passion for cooking to him. After obtaining his CAP in Cuisine at the Lycée l’Étincelle hotel school in Nîmes, he launched his career by working in Scotland in Aberdeen, then at the prestigious Ritz in , Place Vendôme.

In 2011 he was sous chef at the Tour d’Argent when he met Marion Sonier, a cabinetmaker who would become his wife. Trained in the art of pâté en croute by Jean-Michel Bannwart, Meilleur Ouvrier de in 1997, he wishes to participate in the world championships of this specialty. Marion Sonier decides to dive into it too. Thanks to her expertise, she helps him sculpt an original pâté en croute creation, even imagining a scenography to accompany it. She makes him promise: “If we win, you and I, we’ll open a store. »

A few weeks before the championship final, Marion told me if you win the competition, we will open a Pâté en Croute shop. We high-fived and since we won we opened a store. For eight years, we have been at 188 Rue de Grenelle in Paris at Lastre Sans Apostrophe boutique where we cook food like at home with everyday inspirations, from childhood dishes to Technical dishes.
