A new blow for the Halles Mazerat in Saint-Etienne. The Dussap pastry shop will leave the premises in April 2025, confirms Biltoki, manager of the location in the Saint-Etienne hyper-center.
Three years after its opening, twelve businesses are currently occupied for seven vacant stands.
High prices, deserted stores, new projects… Stéphanie Da Silva, network manager at Biltoki, answered us.
“It’s the traders who set the prices”
On the rents of traders – between €1,000 and €1,500 or even 1 900 € per month -, considered excessive by some, the manager confirms these figures.
According to her, this price “is justified in relation to the market, in relation to the attractiveness of the place and what is being done in Saint-Étienne. »
Regarding the high prices on the stands? “The prices today on the stands are justified in relation to the products sold (fresh, local). It is the traders who set the prices, which can seem expensive. It’s due to their product not the rent…”

What future for Les Halles? “A version 2” is being prepared for the year 2025.
“We want to take on the catering side, with French and foreign cuisine. However, we want to keep our “market” players (fish, cheese, vegetables) who are functioning well. They have been able to adapt to customers, offering on-site catering. »
We already have approaches to replace Dussap pastry. A new roaster should arrive as well as a new meat bar. Traders have contacted us.
Les Halles is also considering redefining the customer journey. “Why not remove vacant stands to increase the number of seats, etc.? Or review the layout of the businesses. »
New schedules
To accommodate this shift, schedules will change. “We will be closing later in the evenings from Tuesday to Saturday. Nothing is fixed, it is currently being considered. »
Olivier Longeon, elected from the green opposition, gave his point of view on the question. “We should also, undoubtedly, improve the neighborhood… between the Labor Exchange which the municipality leaves in ruins just like the Beaux-Arts and the wart of the parking lot… to destroy the Ursules parking lot.”
“When the markets arrived, it revitalized the neighborhood. Having a parking lot is good for customers who come from outside, answers Stéphanie Da Silva. But we also see that brands are leaving the city center, which also counts for attendance. »
In any case, Biltoki does not intend to leave the project. “We haven't played all our cards yet. »
