Who has never had a stomach ache after devouring a well-dressed pizza? Arthur Florit knows something about this. A great fan of the Italian specialty, he opened his own pizzeria on July 5, 2024 in Rouen (Seine-Maritime), place Henri-IV.

Hands on the dough
At Margherite, the dough is homemade: “It ferments for 3 to 6 days, a bit like natural sourdough. She is very worked. »
The majority of the products come from Italy, but Arthur Florit also gets his supplies from his family.
The chicken comes from my uncle who is a poultry breeder. I also have cousins who grow wheat. Maybe in the future I will get supplies from them to make my dough.
Since he was very little, the manager of Margherite has gravitated around the agricultural world and the food industry. Baker’s wirehe has known how to make bread and all kinds of pasta almost forever.
After business school where he trained in small and medium-sized business management, he got closer to his desires by training as a cook. Following a stint in several Parisian restaurants and caterers, he finally returned to Rouen in 2019 to open a wine bar. But Covid hits and his project is nipped in the bud.
Take away or delivery
Arthur Florit returns to his childhood memories and bounces back to the family bakery, The Petrin of Rouen
in Bihorel. For three years, he held a position of responsibility, but eventually wanted a change of scenery.
I always had in mind opening a small restaurant or something like that.
The idea of a pizzeria came to him quite easily: “I’m my own boss, so I don’t have to answer to anyone. I’m a bit of a perfectionist so I can work at my own pace. »
At Margherite, there are only pizzas for takeaway or delivery via the Delicity platform. “I’m not going to sell sodas on the side that risk giving customers stomach aches,” argues the boss. He wants to offer something digestible and qualitative, but without breaking the bank too much. And to finish convincing, pizzas cost on average 13 euros. “The cheapest is 7 euros and we have a few high-end pizzas, including one for 19 euros made with truffles. »
