Since September, the Hostellerie du Marché restaurant has reopened its doors after a two-month summer break. A new beginning associated with a new chef: Arnaud Boitrel. He took over the stove, bringing with him his culinary specialties: savory pancakes and sweet pancakes that he offers in addition to traditional catering. A risky bet but one that already seems to delight the taste buds of the Catesians.
It is a story of encounters and new lives, like many great entrepreneurial stories that gave life to this initiative. The story of Arnaud Boitrel and his wife Michèle begins in the 90s at Le Cateau not far from the Hostellerie: at the Festival, the restaurant located opposite the station. For twenty years, the couple were at the helm of the establishment. Then they decide to change their lives to breathe and see something else. They travel, try different activities but the cooking bug is still there.
Breton pancakes
So, when David Blangis, owner of the place, asked them to get back into the kitchen, the couple seized the opportunity. But they want to move away from the traditional and give a Breton accent to the establishment. “ We explained our idea to Mr. Blangis and he gave us carte blanche. We therefore launched our concept of homemade Breton buckwheat pancakes combined with local products… But to continue to satisfy our customers we also offer fish, a stew and a piece of beef every day.» And if the pancakes are appreciated, the pancakes offered for dessert like the famous Kouign Amann are also unanimous.
