This Friday is the opportunity to celebrate World Egg Day. Sources of protein, but also many vitamins, these foods are good for your health. You still need to know the rules for optimal conservation.
Fried, scrambled, omelette… There are many ways to cook eggs, which is celebrated on World Day on Friday October 11. The French also consume a lot of it. According to an inter-professional survey (CNPO), 91% eat it at least once a week. But be careful, this food is fragile, it must be stored with care.
According to ANSES recommendations, “it is essential to always keep eggs at the same temperature in order to avoid the phenomenon of water condensation on their surface”. Contrary to what we do naturally, it is therefore preferable not to store them in the refrigerator. Moreover, in supermarkets, they are never presented in the fresh produce section. The egg is indeed sensitive to changes in temperature.
The ideal is therefore to keep them at room temperature, protected from light. Furthermore, this prevents the transmission of odor. Indeed, the egg shell is not airtight. Placing them next to cheeses or onions therefore risks altering their flavor.
ANSES also reminds that under no circumstances should shells be washed even if they contain impurities. The risk is to increase the porosity of the shell and thus allow the penetration of micro-organisms.
It should also be noted that broken or cracked eggs should not be eaten. Finally, any culinary preparation based on raw eggs, such as mayonnaise or chocolate mousse, must be kept refrigerated and consumed within 24 hours.
