For Christmas, Carcassonnaise Elona Guinebert-Beaudelaire, who created Pâtisseries d'Elona a year and a half ago, is launching the second edition of her log. With the heart of offering original creations, designed from quality products.
“Like last year, I had neither the desire nor the space to make classic logs, neither molded nor rolled.” Having lived at home for a year and a half, the creative pastry chef from Carcassonne, Elona, therefore chose to deconstruct the traditional Christmas dessert to make one in her own image: inventive and delicious. Two, in fact, since two different logs are on the menu for its 2024 collection.
The first is chocolate and Christmas spices: placed on a crisp base of 66% dark chocolate from Mexico, a cocoa Mona Lisa biscuit, a dark chocolate ganache and a ganache mounted with white chocolate infused with Christmas spices follow one another: “The spices come from Damman Frères, I bought them at the Farm in Carcassonne. Then, I put the two ganaches in the same piping bag for a fusion of the two on the top of the log, all topped with 'a delicate dark chocolate lace'explains Elona.
The second, even more original and unique, with almond and chestnuts: “It can be enjoyed in two ways: either 'pick-up' style, each person takes one of the rolls, and we can share the crust for the coffee. Or, for those who prefer a traditional tasting, by cutting it into slices”explains Elona. This log consists of a crunchy 100% almond praline, spirals of Viennese biscuit rolled with chestnut cream, “of a finesse that I never thought I could do”topped with Ardèche chestnut whipped cream with an almond praline center. All decorated with slices of candied chestnuts and favorite almonds. “My grandparents are from Ardèche, I am very attached to Ardèche chestnuts and the Clément Faugier brand”explains the pastry chef.
“I am very proud of these logs, even if they have caused me a lot of insomnia and stress. There is this aspect in pastry that I love as much as I fear, of moving on to the artistic side, with the creation of the drawing, to concrete reality We can create crazy things on paper but it must be feasible in the kitchen, it must be pretty and balanced.confides Elona.
To put one of these logs on her Christmas table, you'll have to be quick: she plans to make 60, and 10 have already found a buyer. The logs are one size, designed for six people. The price is set at €60, but is decreasing: “50 € from two, 40 from three”. They will be collected directly from Elona on December 23 and 24.
The pastry chef is attentive to the composition of her cakes: no colorings, no animal gelatin, local products as much as possible and organic wherever possible.
